Microgreens - What are they?

What are microgreens?
Microgreens are the stage after sprouts and harvested just after the cotyledon leaves have developed and some varieties with the first set of true leaves. They are used for their rich flavours which can come in many forms, their general higher nutritional continents compared to the mature vegetable greens but also adds some great colour to any dish.
Why grow microgreens?
 
For many growers the fast turnaround for crops (7-12 days from seed to harvest), higher price, and an increased demand for the crop has made it more popular to grow. Many microgreen growers are small scale and generally serve a local area, with some exceptions. Delivering directly to restaurants or stores increases the margins and quality of crop by reducing time to consumption by the end customer.
But many of us just grow because we want to provide healthy greens for our families or to have a hobby to learn and master.
